RASPBERRY OAT PANCAKES

Ingredients:

    2 cups rolled oats
    2 cups buttermilk
    2 eggs, beaten
    1/4 cup butter,  melted
    1/2 cup flour
    1 tablespoon sugar
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon cinnamon
    1 pinch nutmeg
    1 pinch salt
    1 cup raspberries
    Real maple syrup

Directions:

Combine oats & buttermilk and refrigerate overnight.
Mix eggs with melted butter and oatmeal mixture.  Combine with the dry ingredients.

Heat griddle to 400 degrees & oil.  Pour batter onto griddle and sprinkle with berries - when bubbly, flip over.

 Serve with butter and maple syrup.

NOTE: Must mix the oats & buttermilk ahead.  Also delicious with blueberries.
