Peaches and Cream Pie

Ingredients

  • Crust
  • ¾ cup flour
  • 1 pkg vanilla pudding mix, non-instant
  • 1 tsp. baking soda
  • 1 large egg
  • 3 tbsp. butter, softened
  • ½ cup milk
  • Filling
  • 3 tbsp. peach juice
  • ½ cup sugar
  • 11 oz cream cheese
  • 20 oz sliced peaches, cut in 1/2" pieces
  • ½ teaspoon cinnamon
  • 1 tbsp. sugar

Instructions

  • Grease or spray with Pam a 9 or 10 inch pie plate.
  • Beat the first 6 ingredients for 2 minutes, until smooth.
  • Pour into pie plate. Arrange the peach slices in the batter.
  • Beat the cream cheese, 1/2 cup sugar and peach juice for 2 minutes. Spoon over the peaches, leaving 1 inch from the edge.
  • Combine the remaining sugar and cinnamon and sprinkle on top.
  • Bake at 350 for 30-35 minutes.
