Ingredients
- 16 oz ricotta cheese
- 1 large egg, beaten
- ¾ cup parmesan cheese, grated
- 1 container pesto sauce
- 1 jar roasted red peppers, chopped
- 1 can tomato paste
- 1 jar classico Italian Sausage Tomato sauce
- 2 large cans tomatoes, petite diced
- 18 lasagna noodles
- 1 lb sweet sausage
- 1 lb hot sausage
- 4 c mozzarella cheese, shredded
Instructions
- Brown the sausages in large frying pan until fully cooked, about 15 minutes over med heat.
- In large saucepan combine the tomatoes, tomato sauce and tomato paste. Bring to simmer and stir in the pesto sauce. Simmer for 15 minutes, stir in sausages. Simmer a few minutes more.
- Meanwhile prepare the lasagne noodles according to package directions.
- Mix the ricotta cheese, egg and parmesan cheese in bowl.
- In large lasagne pan spoon a thin layer of sauce along the bottom of pan. Place a layer of lasagne noodles over sauce. Spread half of the ricotta cheese mixture over noodles, and top with a layer of sauce. Sprinkle with 1/3 of the mozzarella cheese. Repeat with another layer of lasagne noodles, remaining ricotta cheese, sauce layer and another 1/3 of mozzarella cheese. Top with a layer of lasagne noodles, sauce and sprinkle remaining mozzarella cheese over top.
- Bake 350 degrees covered for 40 minutes. Remove foil, bake an additional 40 minutes. Remove from oven and let sit covered at least 15 minutes before serving.
