Raspberry Oat Pancakes

Ingredients

  • 2 c rolled oats
  • 2 c buttermilk
  • 1 pinch salt
  • 1 pinch nutmeg
  • 1/4 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tbsp. sugar
  • 1/2 c flour
  • 1/4 c butter, melted
  • 2 eggs, beaten
  • 1 c raspberries
  • Real maple syrup

Instructions

  • Combine oats & buttermilk and refrigerate overnight.
  • Mix eggs with melted butter and oatmeal mixture. Combine with the dry ingredients.
  • Heat griddle to 400 degrees & oil. Pour batter onto griddle and sprinkle with berries - when bubbly, flip over.
  • Serve with butter and maple syrup.
  • Must mix the oats & buttermilk ahead. Also delicious with blueberries.
