CHOCOLATE CHIP OATMEAL COOKIES

Ingredients:
- 1/2 cup vegetable shortening
- 1 stick butter, unsalted -- softened
- 3/4 cup sugar
- 2 eggs
- 1 small vanilla pudding mix
- 1 cup old fashion oats
- 2 1/4 cups flour
- 1 tbsp vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 12 ounces semisweet chocolate chips
- 1 1/2 cups walnuts (6 ounces), chopped
- 3/4 cup sugar, brown
Directions:

Preheat oven to 375. Butter cookie sheet.

Beat Crisco & butter in large bowl till light.

Gradually add the sugars and beat till creamy. Add
eggs one at a time & beat well. Add vanilla pudding, extract, soda,
water, cinnamon, salt & nutmeg - mix well.

Mix in oats, then flour. Stir in chocolate chips and
walnuts. Place 3 tablespoons of dough per cookie on sheet spaced 2 inches
apart.

Bake 10 - 12 minutes until outsides are set. Cool on
sheet 5 minutes - transfer to rack & cool completely. Store in airtight
container.

Or use: 6 oz chocolate chips &
6 oz Reese peanut pieces; 4 oz chopped walnuts & 2 oz chopped cashews.
